Romaine lettuce with chopped tomato vinaigrette
Ingredients

- 2 large, ripe tomatoes, halved, seeded and chopped
- 1/3 cup basil leaves
- 2 tablespoons tomato sauce
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 small clove garlic, crushed
- 1/2 teaspoon salt
- 1 large romaine lettuce, shredded into pieces the size of a mouthful
- 1/4 cup (35 g) of feta cheese, crumbled
How to prepare
For the vinaigrette, place the tomatoes, basil, tomato sauce, oil, vinegar, garlic and salt in a food processor. Use the button to mix leaving pieces. Toss lettuce with vinaigrette in a large bowl. Sprinkle with feta cheese. Serve at once.

Chopped tomato vinaigrette is also a tasty side dish for grilled meats, chicken or pasta. Can be prepared hours before needed and keep refrigerated. To decorate a simple pasta dish, grate a little mozzarella and add salami and black olives.
