Health Benefits of Kombucha



What is Kombucha

By building Kombucha - a symbiosis of acetic acid bacteria and yeasts. Description of species

Kombucha is a kind of symbiotic organism composed of two components: a fungus and algae. Kombucha is a symbiosis of acetic acid rods and yeasts. Kombucha with kefir fungus belongs to the fungus. Yeast fungus ferments sugars to form an alcohol and carbon dioxide, acetic acid bacteria and the alcohol is oxidized and converted to its organic acid. The result is a flavored drink a pleasant sour taste, reminiscent of the tea brew.

The fungus is a thick mucus layered film floating on the surface of the liquid medium - sweet tea or juice. Kombucha tend to fill the whole free surface of the medium, therefore in industrial conditions it can reach impressive size - up to 100 kg. In a domestic environment it is placed in glass jars from half a liter to five liters, filled with sweet tea.

This fungus, as has been said, looks like a jellyfish. Therefore, it often causes some apprehension, and sometimes even unpleasant sensations. The upper part of it - brilliant, dense, lower - hanging threads. It is there that the sugar solution and tea leaves are transformed into healing drink.

For the proper preparation of this drink are needed sugar, as well as for Indian marine fungus, and tea leaves. That is why this Zoogloea called Kombucha.

Its film has a yellowish-brown color and floats on sweet black tea infusion. May be present in the liquid glucose, sucrose, fructose. It does not matter, and a variety of tea, but it must be without additives and it is black.

Furthermore, the beverage composition obtainable via Kombucha, allocate a number of components:

  • ethanol; 
  • sugar;
  • organic acid, acetic acid, oxalic acid, citric acid, malic acid, pyruvic acid, phosphoric acid, etc.;
  • ascorbic acid;
  • thiamin;
  • enzymes: lipase, protease, amylase, etc.; 
  • fatty acids, etc..
