Choose bright, crisp romaine lettuce heads. Avoid bunches that have mold, holes or are, wilted or yellow. Is common to find slightly darker along the edges of the outer leaves romaine lettuce. This is fine as long as the rest of the head is fresh and green. Fix it by cutting the brown edges of the outer leaves.
Romaine lettuce is highly perishable. I keep it in the refrigerator in a large plastic container with a piece of paper towel on top to absorb excess moisture and condensation. My lettuce will keep for up to five days in this way. If stored wet lettuce in a bag, you probably just hold fresh a couple of days.
Whenever possible, choose organic lettuce (Same provided for any green leaf) as green vegetables have a high content of pesticide residues.
